Today, October 1st, is World Vegetarian Day – a day to celebrate vegetarianism and all the benefits it has to offer for the wellbeing of ourselves, animals and the planet. Well every day is vegetarian day in our household and we enjoy cooking, uncooking and eating a wide variety of tasty dishes.
As vegans there are a number of items we consciously choose to omit from our diet for the sake of compassion to other creatures, the good of the environment and the amazing zestful energy it gives to us. To some people this choice may seem restrictive and I am often asked ‘But what DO you eat?’ The following photo essay is a week of food in our household which may give a peek into an answer to the question. Living in the Caribbean, the majority of what we eat is seasonally grown local produce which is why at the moment there is avocado in nearly every meal! I hope you enjoy our virtual menu and are encouraged to eat your veggies!!

Vegetable stir-fry with dasheen, salad and peanut sauce

Whole-wheat pasta with tomato sauce and vegetables, topped with tahini
SATURDAY

Sauteed breadfruit with scrambled tofu, salad and lots of avocado!
SUNDAY

Breadfruit with mixed bean, veggies and mushrooms in coconut sauce and salad























Fantastic!!!! Just what I needed…but….I’m not convinced mine will turn out like the dishes in these photos. May have to bother you for some tips when I’m ready.
ohhhh…the food looks absolutely delicious!!!!! i got a few ideas to try at home…now if only i can find a breadfruit!!! lol…
